Dès son titre Les Claypool prévient, Sailing the Seas of Cheese n'est pas un album ordinaire. A tort et hâtivement rattaché au metal fusion, Primus est plutôt à chercher quelque part entre The Residents et Rush, Talking Heads et Parliament, sans oublier l'indispensable onction de Frank Zappa.
Sailing the Seas of Cheese surprend avec « Here Comes the Bastards » et ses soudaines envolées, réjouit avec l'expérimental « Sgt. Baker » qui n'a que peu de rapport avec The Beatles. Amateur de titres à rallonges, Les Claypool fait tinter sa basse tout au long d'un « Jerry Was a Race Car Driver » assez directement reliable à Talking Heads, à moins que ça ne soit à Red Hot Chili Peppers.
Toute la complexité de Primus est là, le trio est capable de passer d'un style à un autre en plein morceau, se rapprochant en cela des jam bands comme Phish. « Eleven » joue de l'opposition d'une basse lourde et d'une guitare plutôt enjouée, dualité souvent utilisée chez Primus.
Autre titre important, « Tommy the Cat » mélange le rap funk au rock alternatif, enfin la version que Primus donne de ces genres dans son langage musical bien à lui. Le tout donne sans conteste un album phare du rock alternatif US des années quatre-vingt-dix et même au-delà.
